WE OFFER to learn how to do this home-made pasta in the charming atmosphere of Trulli and the magic  of the Mediterranean Musquee of Valle Itria (Itria Valley). From wise hands, we will share our knowledge to create this “piece of art”, following the traditional receipe and with symple instruments/ingredients: water, flour, a pastryboard and a knife. All ancient secrets will be revealed to realize a perfect “Orecchietta”, with the unexpected ingredients of Love, Patience and Wind.

WHAT WE WILL DO: A 4 hours cooking class with lunch/dinner included, based on learning how to do this typical Puglia’s pasta with some variants too. We will cook the pasta just made togheter and finally will eat it during the included lunch/dinner (Look at the above calendar for the seasonal plan).Orecchiette

LUNCH/DINNER: A complete menù with the best traditional Apulian food: starting from a typical appetizer, we will taste the hand-made Orecchiette with sauce (meat sauce or vegetables, depending on the season or your preferences, see below), a second course, seasonal fruits, water and wine included (Negramaro, Salice Salentino or Primitivo wine, depending on availability).

We live in the enchanting countryside called "Itria Valley", Unesco heritage, at the limit of the "Murgia salentina" (part of the Apulian hill).

We offer an experience to live the origins of our cuisine in the typical Puglia's buildings: the Trulli.

Making the Orecchiette (our typical pasta) is like a ritual: an ancient art made not only of flour and water but also of soil, wind and a time spent slowly in the same way our grandparents did.  We will prepare a typical menù, based on "braciole" (rolled meat) or vegetables, collected from our organic vegetable garden.

In this peaceful countryside surrounded by centenary olives and figs trees, we will relax with an appetizer and we walk all around to discover the particular Trulli, our house. Waiting the boiling Orecchiette we will tell the history of this unique buildings, the architecture and way of living it. You can anticipate, reading here.

CLASS: You will learn how to do this particular home-made pasta with all its variants and we will reveal the secrets linked to. You'll partecipate to prepare the sauce (with meat or vegetables) for our lunch/dinner.

    The cooking course with Simona was simply fantastic. We got a warm welcome and felt immediately comfortable learning the local cooking techniques of Puglia. Her local knowledge of the region was indepth and profound which made the course also super interesting. Certainly one of the highlights of our trip and will be recommending it to everyone.

Er was een gezellig welkom met een kopje koffie en een leuk gesprek. De opbouw van de dag is er goed! Er wordt veel verteld over de keuken van Puglia en de omgeving.     My husband and I had the best day with Simona learning how to make orecchiette. We were welcomed immediately and got to enjoy the beautiful and calming setting of Simona’s home amongst the conical trulli and beautiful countryside. Simona spent lots of time teaching us about the pasta, the history about it and of the area. Her husband cooked the pasta perfectly and we enjoyed a delicious lunch together with our generous hosts. It was an extremely pleasant way to spend the day and we left full and like we had a real taste of Puglia. Would definitely recommend!

    Wonderfull experience. Cooking with locals, learn about the typical dishes, learn about pasta and learn more about the Puglia culture. After you have an amazing lunch with locals, who make you feel just at home. We were in Italy on our honeymoon and felt this was a perfect last day for us. We were joined by 5 girls on a bachelorette party but all very friendly. If you like to head italian and have the feeling you just beling than this is perfect. We definitly recommend!

    We had such a special day with Simona. She was so welcoming, caring and interested in our lives. She explained a lot about Puglian history and showed us her unique trullo and explained what she grew on her property. She provided lovely fresh fruit and coffee for breakfast to give us some energy for orichiette making which was tricky, but she taught us well. The meal was one of the best meals we had in our time in Italy. We appreciated her welcoming us into her home and left feeling so content with such a special experience.

    The “orecchiette pugliesi” cooking class was absolutely fabulous! Simona welcomed us in a beautiful “Trullo” with a flourishing garden; the company was great, she and her husband have been very knowledgeable about the history of the Trulli and the traditions behind the Orecchiette. The cooking class was altogether fun, very interesting, hands-on activity and the final lunch, tasting the orecchiette that we made, plus several other things offered from the hosts was unbeatable!! I recommend her cooking class 100 % while visiting Puglia and the Trulli areas.

    Simona e’ molto ospitale e ci ha accolto sin da subito come fosse un’amica. La location e’ suggestiva, un trullo immerso nella campagna pugliese in cui i prodotti sono tutti prodotti a km 0. Esperienza divertente e coinvolgente, (e quanta pazienza ha avuto con noi !!!). La serata e’ andata ben oltre alle aspettative e terminata con una cena dall’antipasto al dolce a base di prodotti locali. Ci ha intrattenuto con racconti della tradizione e una squisita conversazione. Consigliato!

    Het was een geweldige ervaring. Simona heeft ons écht DE kneepjes geleerd die er toe doen om zelf thuis de orrecchiette te maken. Ze leerde ons het perfecte deeg maken, en waar je op moet letten, de greep om de pasta zelf te maken en zelfs de saus leerde ze ons. In de “wachttijd” vertelde zij ons meer over de geschiedenis van de Trulli en Puglia. Het was zeer informatief. Het is echt een hele leuke ervaring bij Simona. Simona is erg vriendelijk.

    Esperienza stupenda e indimenticabile! Certe orecchiette ti rimangono nel cuore. Simona persona eccezionale e con una pazienza da vendere perché la mia ragazza era un po’ negata.. scherzi a parte veramente una bellissima persona e molto preparata. Leonardo il top. Ci ha fatto sentire a casa e abbiamo parlato di tutto e di più. Una persona molto gentile e simpatica. Ripeto .. esperienza indimenticabile, ma quello che ci è rimasto nel cuore è la sensazione di aver trovato nuovi amici e di esserci sentiti a casa. Per fortuna siamo stati con altri ospiti davvero simpatici con cui le risate davvero e sottolineo davvero non sono mancate. Oggi abbiamo 6 amici in più.     Esperienza nel complesso molto interessante! Host preparata che arricchisce l’esperienza con cenni storico culturali che permettono all’ospite di comprendere il contesto di riferimento. Migliorabile il livello di pulizia complessivo (es. lavaggio mani, fumo) e la durata complessiva che abbiamo trovato in alcuni tratti lenta e poco coinvolgente (durata consigliata di 3 ore). Nonostante i sopra citati elementi di possibili migliorie Simona ci ha aperto le porte di casa sua come fosse la nostra. Consigliamo questa esperienza nella speranza che questi elementi vengano recepiti!

    Simona e Leonardo sono persone incredibili. Sin da subito io e il mio ragazzo ci siamo sentiti a casa nostra, come se fossimo stati accolti da due vecchi amici. Riscoprire la nostra amata Puglia, attraverso i racconti di Simona, la preparazione delle orecchiette, la natura cruda, i gatti (il micione Bimbo) e le esperienze di vita di Leonardo, è stato un viaggio nei ricordi, nelle tradizioni e nella semplicità di questa terra generosa e accogliente. Da pugliese è stato come rivedere la propria regione con nuovi occhi curiosi e da una differente prospettiva. Esperienza super consigliata sia per turisti, ma anche per pugliesi.

    Io e il mio fidanzato siamo rimasti sorpresi dall’ospitalitá, dalla gentilezza e dal riguardo che hanno mostrato Simona e Leonardo nei nostri confronti.     My friends and I took Simona’s pasta making class and enjoyed every minute of it! She is a lovely person and her passion for Puglia and its traditions is wonderful to see. Her mother also joined us to help out and both of them were fun and patient with our attempts. We had a lot of laughs and a lot of homely orecchiette that ended up tasting much better than they looked! I highly recommend you spend an afternoon or evening with Simona – you’ll be glad you did!

    Simona was kind enough to make the trek to the trulli our group was renting outside of Ostuni, rather than hosting at her home. She and her family showed up right on time and came ready to get to work. Few of us had workable Italian, but her English was more than sufficient for the task. We began with her mother guiding us through making bombettes. We then moved on to making pasta from scratch. We made orochiette and a simple macaroni. They were patient as they guided 13 amateurs through kneading dough for the first time. The end result was delicious and definitely demonstrated the value in making homemade pasta. I look forward to taking these skills home. I’m so glad we did this and Simona and her family were lovely company for dinner!

    A lovely experience. Down to the fantastic hostess [great English] and the great people that we were lucky enough to experience this with. Set in the heart of the countryside [beautiful (Website hidden by Airbnb) was a great evening and one I won’f forget.     A really fun time at Simona’s learning to make and shape the pasta as well as preparing the meat dish it was accompanying. Simona also had lots to say on the history of the pasta style and aspects of Puglia and its own incredible history. Simona and Leonard also organise historical tours and cave tours locally so could connect a lot of the facts from the area and its cuisine. We also collected wild herbs from their garden and she talked about what was available to be foraged in the area. It was a great and informative way to spend a long lunch and I’m planning to go back with the rest of the family.

    We loved this!! It’s perfect whatever the weather too! We were welcomed with an apperativo and soon got to the pasta making with Simona’s mother. We harvested vegetables from the garden before putting the pasta we’d made together a delicious sauce for lunch. There was a starter and main too! It was a great experience that would come highly recommended!

    We had a wonderful time at Simona’s House. It was truly a joyful and authentic experience. We went to their country house and first walked around their garden, tasting figs and spicy arugula and almonds. We also had appetizers and wine and then the pasta making began. Simona’s mother was instrumental in teaching us how to make the pasta and it was touching to see a family tradition passed down through the generations. We then enjoyed a great meal together al fresco. You must do this if you’re in Ostuni and want a truly local experience!

    “We booked the cooking experience for our group of 9 on a recent holiday to Puglia. We couldn’t say enough good things about the day it was wonderful from start to finish. We learned how to make two types of pasta – orechiette and macaroni from Simona’s mother. While the pasta was cooking we went foraging in her garden for the side dishes and desert – fresh figs from tree, arugula and also got to try some almonds. We ate lunch all together and shared a carafe of wine. It was a truly wonderful authentic experience, we really felt like we learned a lot, had a lot of fun and of course enjoyed a wonderful meal!     Simona graciously accommodated our family by creating an evening class for us. We made orecchiette and gemelli and the setting was lovely. Finished off with a great feast just a few meters from the piazza. Very lovely time.

    Simona was really nice and helpful accommodating 4 of us for the pasta course in Ostuni followed by lunch for 9 so that our family can join us. We really enjoyed the pasta making, very informative and good fun. We had a recipe and certificate to take away. The course plus lunch would have been a reasonable cost but as the rest of our family only joined us for lunch we felt that €25 per adult €15 per child for lunch were expensive as we had a large portion of orecchiette with tomato sauce but only one tiny fresca per person. The cost does include drinks. Despite the lunch cost my son really enjoyed the pasta making and said it was the highlight of the trip. Thank you.

    What a very enjoyable way to spend an afternoon – this course was described as 3 hours long and we would learn how to make a particular kind of pasta. Simona was great at responding and we arrived exactly where she arranged.The course was held in a restaurant and there were 6 of us sharing 3 pasta boards. This meant that whilst one was making pasta the other person just watched. The lady demonstrating was nice and very talented but we felt that things were not clearly explained and that we did not get a printed sheet at the end or during the course to explain to us what we had done so we finished the course in a happy mood but with no reference so we can try at home. The course started at 6.30pm and finished at 8pm and if we had not chosen to eat at the restaurant but to take our fresh pasta home with no sauce etc the 45 euros would have been rather overpriced in our opinion. However we chose to eat on the balcony of this pretty restaurant and enjoyed antipasti and our pasta in generous portions which made the course value for money. My group definitely thought that one pasta tray per person should have been provided so we could all have tried to do things together and that it should be made clear that the course itself is only 1.5 hours. Otherwise a most enjoyable time was had by all but a reference sheet would have been really nice to take away as a souvenir and helpful reminder the next time we will try to make pasta. Thankyou Simona and Leonardo for a lovely evening.

    My wife, her family and I have visited the cooking class in June 2018. It was an amazing experience: very warm welcoming, determined coaching, a lot of fun and great lunch at the end. As for the latter, we ate not only the pasta we had prepared but also different delicious local dishes with Italian wine. We definately recommend this cooking class!
