Simbolo della Puglia, le orecchiette sono un pilastro della tradizione culinaria pugliese, fatte rigorosamente a mano e con una forma concava che raccoglie meglio il sugo fatto con pomodori coltivati nel sole della nostra terra e che ricorda i tetti dei nostri trulli.
La forma particolare è approssimativamente quella di piccole orecchie, da cui deriva appunto il nome. Tale forma ne facilitava l’essiccazione e la conservazione per fronteggiare i periodi di carestia. Erano il cibo preferito da imbarcare sulle navi che si accingevano ad affrontare lunghi viaggi, insieme ad un altro prodotto tipico salentino: la frisa.

E’ proprio nell’incanto dei trulli, forma a cui l’orecchietta si ispira, e della magia della macchia mediterranea, impareremo da mani sagge l’antica arte, seguendo la ricetta tradizionale e muniti di semplici strumenti: acqua, farina, una spianatoia ed un coltello. Ci saranno rivelati i segreti per realizzare una perfetta “orecchietta”, con l’ingrediente della pazienza e tanto amore.

Al termine, lo chef consegnerà ai partecipanti un attestato di partecipazione.

Le orecchiette auto-prodotte vengono di solito preparate per il primo piatto del pranzo incluso. E’ possibile, piuttosto, richiedere di portare via con sè la preziosa pasta. In questo caso, il primo sarà composto sempre da orecchiette, prodotte al momento per gli ospiti.

PRANZO/CENA: Gusteremo insieme questo piatto speciale completo di 3 portate a base di antipasti tipici di terra, composto dalle orecchiette della nostra cooking class con condimento di sugo di carne e con cacio ricotta, secondo di carne o verdure a richiesta, frutta, acqua e vino (Negramaro, Salice Salentino o Primitivo).

E’ possibile richiedere l’uso di farine speciali (ad esempio senza glutine o integrali). E incluso il servizio fotografico gratuito.

Nella campagna della Murgia, nel cuore della macchia mediterranea, patrimonio Unesco, un'esperienza unica per conoscere le nostre tradizioni e le origini della nostra cucina nei tipici edifici pugliesi: i trulli.

L'arte di fare le orecchiette (la nostra pasta tradizionale) fa parte di un rituale fatto anche di terra e vento, un tempo in campagna, speso lentamente per preparare il nostro pranzo raccogliendo erbe selvatiche, frutta, pomodori, meloni e tutto ciò che il nostro orto biologico produce  stagionalmente. Lo stesso tempo lento vissuto dalle nostre nonne per preparare il pranzo quotidiano per tutta la famiglia.

A casa, una spianatoia, la farina e il vento saranno gli ingredienti semplici per fare le nostre orecchiette. Impareremo a fare questa particolare pasta, le sue variazioni e molti altri segreti saranno svelati. Parteciperemo quindi alla preparazione di ragù, verdure e formaggi e tutto il necessario per il pranzo. Degusterete tutti i nostri preparativi.

Pranzo tipico composto da leggero antipasto di terra o frise condite a scelta,  primo di orecchiette prodotte con sugo di pomodori freschi o coltivati da noi, basilico e cacioricotta, secondo di carne o verdra su richiesta, frutta e bevande (acqua e vino locale)

    My wife, her family and I have visited the cooking class in June 2018. It was an amazing experience: very warm welcoming, determined coaching, a lot of fun and great lunch at the end. As for the latter, we ate not only the pasta we had prepared but also different delicious local dishes with Italian wine. We definately recommend this cooking class!

    What a very enjoyable way to spend an afternoon – this course was described as 3 hours long and we would learn how to make a particular kind of pasta. Simona was great at responding and we arrived exactly where she arranged.The course was held in a restaurant and there were 6 of us sharing 3 pasta boards. This meant that whilst one was making pasta the other person just watched. The lady demonstrating was nice and very talented but we felt that things were not clearly explained and that we did not get a printed sheet at the end or during the course to explain to us what we had done so we finished the course in a happy mood but with no reference so we can try at home. The course started at 6.30pm and finished at 8pm and if we had not chosen to eat at the restaurant but to take our fresh pasta home with no sauce etc the 45 euros would have been rather overpriced in our opinion. However we chose to eat on the balcony of this pretty restaurant and enjoyed antipasti and our pasta in generous portions which made the course value for money. My group definitely thought that one pasta tray per person should have been provided so we could all have tried to do things together and that it should be made clear that the course itself is only 1.5 hours. Otherwise a most enjoyable time was had by all but a reference sheet would have been really nice to take away as a souvenir and helpful reminder the next time we will try to make pasta. Thankyou Simona and Leonardo for a lovely evening.

    Simona was really nice and helpful accommodating 4 of us for the pasta course in Ostuni followed by lunch for 9 so that our family can join us. We really enjoyed the pasta making, very informative and good fun. We had a recipe and certificate to take away. The course plus lunch would have been a reasonable cost but as the rest of our family only joined us for lunch we felt that €25 per adult €15 per child for lunch were expensive as we had a large portion of orecchiette with tomato sauce but only one tiny fresca per person. The cost does include drinks. Despite the lunch cost my son really enjoyed the pasta making and said it was the highlight of the trip. Thank you.

    Simona graciously accommodated our family by creating an evening class for us. We made orecchiette and gemelli and the setting was lovely. Finished off with a great feast just a few meters from the piazza. Very lovely time.

    “We booked the cooking experience for our group of 9 on a recent holiday to Puglia. We couldn’t say enough good things about the day it was wonderful from start to finish. We learned how to make two types of pasta – orechiette and macaroni from Simona’s mother. While the pasta was cooking we went foraging in her garden for the side dishes and desert – fresh figs from tree, arugula and also got to try some almonds. We ate lunch all together and shared a carafe of wine. It was a truly wonderful authentic experience, we really felt like we learned a lot, had a lot of fun and of course enjoyed a wonderful meal!     We had a wonderful time at Simona’s House. It was truly a joyful and authentic experience. We went to their country house and first walked around their garden, tasting figs and spicy arugula and almonds. We also had appetizers and wine and then the pasta making began. Simona’s mother was instrumental in teaching us how to make the pasta and it was touching to see a family tradition passed down through the generations. We then enjoyed a great meal together al fresco. You must do this if you’re in Ostuni and want a truly local experience!

    We loved this!! It’s perfect whatever the weather too! We were welcomed with an apperativo and soon got to the pasta making with Simona’s mother. We harvested vegetables from the garden before putting the pasta we’d made together a delicious sauce for lunch. There was a starter and main too! It was a great experience that would come highly recommended!

    A really fun time at Simona’s learning to make and shape the pasta as well as preparing the meat dish it was accompanying. Simona also had lots to say on the history of the pasta style and aspects of Puglia and its own incredible history. Simona and Leonard also organise historical tours and cave tours locally so could connect a lot of the facts from the area and its cuisine. We also collected wild herbs from their garden and she talked about what was available to be foraged in the area. It was a great and informative way to spend a long lunch and I’m planning to go back with the rest of the family.

    My daughter and I spent a lovely afternoon with Simona preparing our meal from start to finish. She is gracious and very passionate about her heritage and sharing it with her guests. I would recommend this to anyone who wanted to indulge in southern Italian cooking skills and a sense of the region’s culture and history.

    Great experience for four of us. Simona and her mother Stella guided us through the process of making orichietta and involtini and then we enjoyed a great lunch and fun discussion sitting around the table at her trulli. Everyone felt it was a day very well spent.

    What a wonderful experience! Simona, her mom and her aunt shared all their pasta making secrets with us and we prepared a delicious meal together. Simona’s aunt even babysitted our 10 month old son so we could completely immerge in the pasta making process. Also, Simona’s trulli is a very original and inspiring place!     We had a lovely time making and eating our lunch! We were three adults, two small children, and everyone was able to help. We “mastered” pasta making and went for a walk around the property, learning a great deal about the plants. Simona and her mother were great teachers, and fabulous cooks!

    A lovely experience. Down to the fantastic hostess [great English] and the great people that we were lucky enough to experience this with. Set in the heart of the countryside [beautiful (Website hidden by Airbnb) was a great evening and one I won’f forget. I particularly liked the walk around the Trulli / interesting facts about the foliage etc. Simone was a great hostess and a great pasta maker!

    We loved learning how to make pasta from Simona and her delightful mother! Not only was the experience informative and fun, but this turned out to be the best tasting pasta we had in Puglia accompanied by Simona’s flavorful sauce. Nice people. Good time. Great food. I’d go again and can’t wait to try making pasta at home!

    Simona was kind enough to make the trek to the trulli our group was renting outside of Ostuni, rather than hosting at her home. She and her family showed up right on time and came ready to get to work. Few of us had workable Italian, but her English was more than sufficient for the task. We began with her mother guiding us through making bombettes. We then moved on to making pasta from scratch. We made orochiette and a simple macaroni. They were patient as they guided 13 amateurs through kneading dough for the first time. The end result was delicious and definitely demonstrated the value in making homemade pasta. I look forward to taking these skills home. I’m so glad we did this and Simona and her family were lovely company for dinner!
